This cake is very easy to make; it is simple and a lot of fun to bake. Even tiny toddlers can help with the preparations.

Step1: Place flour in the bowl of a stand mixer. Create a well in the middle with a cooking spoon and put 1 tablespoon of sugar, the yeast, and about half of the lukewarm milk into the well.

Step 2: Mix the ingredients in the well, adding a little flour from the edge of the well. Cover the bowl with a clean dish towel and let it sit in a warm spot for about 15 minutes.

Step 3: Add the rest of the ingredients and knead the dough for about 10 minutes, or until it is smooth and shiny.

Cover it again with the kitchen towel and set it aside in a warm place for about 2 hours, or until it has doubled in size.

Step 4: In the meantime, wash the plums, cut off the stems, and cut each plum half into three or four pieces.

Step 5; Cut the butter into small cubes for the streusel and put it in a medium-sized bowl with the flour, sugar, cinnamon, and vanilla sugar. Knead the ingredients until crumble form.

Step 7: Arrange plum slices on top of the rolled out yeast dough. Sprinkle with ground cinnamon to taste.

Step 8: Spread streusel evenly over the plums and bake for 25 to 30 minutes.

Hint: For a less sweet version you can bake the cake without crumble topping.

What Kind of Plums Should be Used in a German Plum Cake?

This dessert is traditionally made using Italian plums. Other plum varieties, such as black, red, or yellow plums or mirabelles, can also be used.

Other Fruit Variations

This streusel sheet cake can be also created with a wide range of fruits, including:

  • Apples & Pears – thin slices of apples or pears are a wonderful alternative to plums.
  • Apricots & Peaches – add slices of apricots or peaches to the cake instead of Italian plums. You can use canned or frozen fruit in place of fresh fruit. If using frozen fruit, add it to the dough semi-frozen and bake it right away. Otherwise, the cake may become soggy.
  • Cherries & Berries – fresh berries or canned cherries are also a delicious fruit choice for this recipe.
  • Rhubarb Add some pickled jalapeños or banana peppers to the salad, or spice the dressing up with cayenne pepper or Sriracha.

The cake keeps well in the refrigerator for 3-4 days. Make sure it’s stored in an airtight container.

If you have any leftovers, which is unlikely given how good this cake is, you can freeze it. Allow at room temperature to defrost.

Top tip

Instead of streusel, top the cake with almond slivers or just leave it plain. Both variations are also traditional German ways of preparing plum cake. This way, you can substantially reduce the sugar and carb content while also lowering the calorie count.

  • 2 ½ all-purpose flour
  • cup sugar
  • 1 tbsp. vanilla extract
  • ¾ cup milk
  • 1 egg
  • 5 ½ tsp. active dry yeast or 2 ½ tsp. instant yeast
  • 1 pinch of salt
  • 4 ½ tbsp. butter melted
  • 1 tsp. lemon peel


  • 3-4 pounds plums
  • ½ tsp. ground cinnamon


  • 2 cups all-purpose flour
  • 1 ⅓ cups sugar
  • ½ tbsp. vanilla extract
  • 1 tsp. ground cinnamon
  • 14 tbsp. butter cold


  • Add flour to a stand mixer bowl. With a cooking spoon, shape a well in the middle and add 1 tbsp. sugar, yeast, and about half of the lukewarm milk to the well.

  • Mix the ingredients in the well while incorporating a small amount of flour from the rim of the well.

  • Cover the bowl with a clean kitchen towel and allow to sit for about 15 min. in a warm place.

  • Add the remaining ingredients to the bowl and knead for about 10 min. or until the dough is smooth and shiny.

  • Cover the bowl with a kitchen towel once more and set aside in a warm place for about 2 hours, or until the volume has doubled.

  • In the meantime, wash the plums, remove the stem, and cut the plums into halves, and then cut each half into 3 or 4 pieces. Peel the apples, remove the core, and slice into small slices.

  • Cut the butter for the streusel into small cubes and add them with the flour, sugar, cinnamon, and vanilla sugar to a medium-sized bowl. Knead the ingredients until crumbles form.

  • Preheat the oven to 350 °F.

  • Grease a baking sheet and flour lightly. Roll out the yeast dough and arrange the plums and apple slices on top of the dough.

  • Sprinkle with cinnamon to taste and spread streusel evenly over the fruit.

  • Bake for about 25 – 30 Min.
